The Benefits of Mango and Raspberry

Mangoes and raspberries are the stars of this recipe, each bringing their own unique health benefits and delightful flavors.

Mangoes are packed with vitamins and minerals, especially vitamin C and vitamin A, which are essential for boosting the immune system and promoting healthy skin. Their natural sweetness makes them a fantastic base for popsicles, providing a rich and creamy texture when blended.

Raspberries, on the other hand, are low in calories but high in fiber, vitamins, and antioxidants. These tiny berries are excellent for heart health and have anti-inflammatory properties. Using raspberries in your popsicles not only adds a burst of tartness that complements the sweetness of mangoes but also ensures you’re serving a nutritious snack.

Tips for Perfect Popsicles

Creating the perfect popsicles is an art, and here are a few tips to ensure your mango and raspberry popsicles turn out great every time:

  1. Use High-Quality Molds: Investing in good-quality popsicle molds can make a big difference. Larger molds, like Tovolo popsicle molds, are perfect for making substantial popsicles that kids will love. They allow for more creativity in layering and adding chunks of fruit.
  2. Opt for Frozen Raspberries: While fresh raspberries are delicious, frozen raspberries work better in this recipe. They help keep the popsicle mixture from turning entirely pink and remain as small, delightful flecks throughout the popsicle.
  3. Incorporate Coconut Milk: Adding coconut milk to your popsicle mixture creates a creamy texture that balances the fruity flavors. It also makes the popsicles more satisfying and adds a tropical twist.
  4. Experiment with Layers: Don’t be afraid to get creative with layers. You can alternate between mango puree and raspberry bits to create beautiful, striped popsicles that are as pleasing to the eye as they are to the palate.

Convenient and Fun to Make

These popsicles are creamy from the coconut milk, with a little bit of crunch from the berries. I prefer to use frozen instead of fresh raspberries because they won't turn the entire popsicle mixture a pink color when mixed in, and will stay suspended as little rosy flecks.

Ingredients

  • 2 Mangoes
  • 2/3 cup Coconut Milk
  • 1-2 Tbsp Honey, personal preference, I like it sweeter
  • 1/2 tsp Vanilla
  • 3/4 cup Frozen Raspberries, roughly chopped

Instructions

  1. Remove the skin from the mangoes and cut the fruit out from around the pit. Discard skin and pit.
  2. Add all ingredients except raspberries to a high powered blender (like the Blendtec) or food processor. Process until completely smooth.
  3. Stir in the chopped raspberries and pour mixture into popsicle molds.
  4. Freeze until solid, about 6 hours or more.
  5. I used regular Tovolo popsicle molds, so this recipe makes just enough for these molds.

I'm not so sure about coconut milk, there are a lot of different things which you can use instead of it.

Is it healthy? I know this question may sound weird, but my kid's health is a huge concern for me, I always try to avoid GMO and other products that may cause some troubles.
