Banana Pancakes with Blueberry Compote

I’m a firm believer that all pancakes NEED syrup. Not just syrup, but MAPLE syrup. It’s not an option.

However, this morning I may have been proven wrong. Last night, Rob told the kids that today was International Pancake Day and that meant we had to have pancakes. It was NOT International Pancake Day, but try telling that to the kids. So I decided to be awesome and make pancakes. Now I’m the best mom ever.

Not only did the kids like them (which of course they would, it’s pancakes!) but Rob did too. And he’s a peanut-butter-maple-syrup-on-your-pancakes kind of guy, so this was a victory for sure.

Banana Pancakes with Blueberry Compote

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients

  • 2 Bananas, peeled
  • 3 Eggs
  • 3 Tbsp Coconut Flour
  • 1 Vanilla Bean Pod, seeds scraped out
  • 1 tsp Vanilla Extract
  • ¼ tsp Baking Soda
  • Cinnamon, to taste
  • Pinch of Sea Salt
  • 1 cup frozen Blueberries
  • 2 Tbsp Honey

Instructions

  1. Place all ingredients except blueberries and honey in a food processor or blender (we use the Blendtec) and process until smooth.
  2. Heat up a large non-stick skillet or griddle over medium heat (I had my griddle set to 325°F). Put a little coconut oil on the griddle/skillet (just a little, maybe a teaspoon).
  3. Once skillet is hot, pour approximately 1-2 Tbsp of the mixture onto the skillet. I used a small cookie scoop so all the pancakes were uniform in size.
  4. Wait until each pancake begins to form bubbles on the surface, then flip. This might take a while, you want to cook them "low and slow" so the sugars in the banana don't burn the pancakes.
  5. While the pancakes are cooking, make the compote.
  6. Place frozen blueberries in a small saucepan over medium-high heat. Once the berries begin to soften, add in honey and use a spatula to break up the berries even more.
  7. Make all your pancakes (I keep mine warm in the toaster oven set to the lowest temp) and top with berry compote. No syrup needed!

I've made these a couple times and the taste is great but they seem difficult to flip when cooking; the mixture seems too wet. Any suggestions?

Hi Lynn. The texture of the batter is a little thinner than you might expect from a non-paleo batter. You could add a tiny bit more coconut flour to thicken it a bit, just remember that a little coconut flour can go a long way :)

These pancakes are SO good! Amazing, even! My family didn't even realize they were Paleo. I've made several of your recipes (mayo, ranch dressing, and the bang bang shrimp are my favorites) and I have been thrilled by each one. You've renewed my excitement in the Paleo diet. I tried these last week and GEEEEEZE.. they are amazing. I had tried a similar pancake mix but it didn't hold up like this one did. I even did a bigger size then you suggested and it worked out so well! The BB compote is awesome. I had a huge bag of frozen bb in my freezer for a few months that a friend gave me but just didn't know what to do with it. I sub agave for honey but it was still yummie. Now I have a basic recipe for frozen fruits that I want to make as a compote. I can't say enough how yummie these are. I have also passed it on to friends on FB and Instagram. I will deff be using your site (it's saved on my home page book marks) almost daily. I am a chef so I can interchange things out with out an issue, but this site is so simple that a lot of my "home mom" friends can use it without having to always rush out and get something new for each recipe. I LOVE LOVE LOVE your "basics" list for paleo. When I started a few months ago, I was so lost. You can access this on your phone and look it up easily. THANK YOU for making it simple, healthy & FAMILY friendly.. My kids & husband have tried some of the things from here and loved it!! Do you have a FB?
