I adore easy, delicious dinners. But really, who doesn’t. It comes together in no time and also makes use of leftover chicken if you have some on hand, which removes an entire step.

The only time consuming part is making the sauteed onions, and that’s just because cooking onions low and slow results in a much better flavor and texture. I like to cook a bunch of onions and chicken in advance and just toss them in the pan to reheat while I make the sauce.
Cheddar Alfredo Sauce
And speaking of the sauce, CHEDDAR Alfredo?! I know, it’s like regular Alfredo but somehow better. Because cheddar makes everything better. So Cheesy.
Chicken & Onions with Cheddar Alfredo

Ingredients
Chicken & Onions
- 2 Yellow Onions
- 3 Chicken Breasts (see notes)
- Redmond Salt, to taste
- Ground Black Pepper, to taste
- 4 tbsp Bacon Fat of Butter, for cooking, divided
Cheddar Alfredo Sauce
- 2 Tbsp Butter
- 1/2 cup Cream
- 1 clove Garlic
- 6 oz Cheddar Cheese
Instructions
Chicken & Onions
- Cut onions in quarters and slice.
- In a medium skillet over medium-low heat, melt 2 Tbsp bacon fat/butter. Add the onions and saute, stirring occasionally, until caramelized and golden brown, about 15-20 minutes.
- If using leftover/precooked chicken, skip to STEP 4. If not using leftover or precooked chicken, chop the chicken breasts into bite-sized pieces. Season with salt and pepper, and cooke over medium-high heat in remaining 2 Tbsp bacon fat/butter until opaque and completely cooked through
- If using leftover/precooked chicken, reheat in skillet over medium-high heat in 2 Tbsp bacon fat/butter until heated through and slightly crisped on the edges.
- Add the caramelized onions in with the chicken. Mix together and serve topped with the Cheddar Alfredo (below).
Cheddar Alfredo Sauce
- Melt butter in a small saucepan over medium-low heat. Add minced garlic and saute until fragrant.
- Add cream and stir. Bring to a simmer.
- Add in the cheese and stir until fully melted, bring to a simmer until thickened. Stir constantly to keep it from sticking to the bottom or bruning.
- Serve right away.
Notes
* I usually make this with leftover chicken or make the chicken in advance, which helps this dish come together pretty quick.
