Coconut Keto Clusters Recipe (Sugar Free & Diabetic Friendly)
You know, if you find store bought options at Costco or at your local grocery store that say “KETO” on the packaging it’s almost a guarantee that they’re going to taste bad or raise blood sugar.
When you control the (low carb) ingredients or purchase from a reputable company that focuses on products that will not raise blood sugar, you’ll stay in Ketosis. However, it’s a big risk to trust a lot of store bought brands.
Ingredients Needed
- 1 1/2 cups Unsweetened Coconut Chips
- 1/3 cup Pecans, roughly chopped
- 2 Tbsp Hemp Hearts
- 1 Tbsp Chia Seeds
- 1/3 cup Slivered Almonds
- 1/4 cup + 2 Tbsp Keto-friendly Caramel Sauce

How to Make Coconut Clusters
You’ll first need to preheat oven to 325°F. Your best bet for easy cleanup is to line a baking sheet with parchment paper. Then set it aside.
Combine All Ingredients
Next, in a mixing bowl, combine all of the ingredients. Mix everything really well until its all evenly coated with the caramel sauce. I prefer using a Danish whisk for this.
Pour the mixture onto the prepared baking sheet and spread to an even thickness, about 1/2″, making sure that there aren’t any small pieces separate from the main mass.
Bake the Coconut Clusters
Bake in the preheated oven for 16-20 minutes, or until it is nicely browned. Watch carefully after about 14 minutes to be sure the edges aren’t browning to much or burning.
Remove from oven and let cool completely on the pan before breaking apart. It will continue to crisp up as it cools.
Once fully cooled, break into bite-sized clusters and store in a tightly-sealed container at room temperature.
